It's three-layer construction is made with a proprietary blend of professional-grade metals: a stainless steel interior and exterior and a heat-responsive aluminum core. The rim is rolled, sealed and polished to protect the internal aluminum layer.

Braising uses both wet and dry heats to break down tough cuts of meat and tenderize fresh vegetables. Braised meats are meltingly tender with a rich, flavorful sauce. A generously-sized cooking surface makes this pan perfect for shallow frying, braising and cooking down liquids. The tight-fitting lid keeps heat and moisture inside.
